Southern Pecan Pie

Eggs, Well beaten
1/2 cup

1/2 teaspoon
Salt
1/2 cup
Evaporated Milk
2 Tablespoons
Flour
1 cup
Light Corn Syrup
1 teaspoon
Vanilla
1 cup
Pecans, coarsely chopped
Mix all ingredients, pour mixture into unbaked pie shell and bake approximately 50 minutes at 375 degrees. Yield: one 9" pie.
Nutty Fingers
1/2 cup
Margarine
1 teaspoon
Vanilla
1 cup
Pecan Meal
2 Tablespoons
Sugar
1 cup
Self Rising Flour
Blend sugar and margarine until creamy. Add flour, vanilla, and pecan meal. Shape dough into fingers. Bake at 325 degrees for 20 minutes. Roll in confectioners sugar while still warm.
Nutty Fruit Salad

Pineapple chunks, drained
3/4 cup
mayonnaise
4 tablespoons
non-dairy topping

large bananas, sliced

raisins
1 cup
pecans, chopped
Combine mayonnaise and non-dairy topping. Mix well. Combine ingredients and add mayonnaise mixture just before serving.
Fantasy Pecan Cookies

butter or margarine
3/4 cup
granulated sugar
1/4 cup
light brown sugar

plain flour

baking soda
1/2 teaspoon
salt
1/2 cup
shredded coconut
1/2 cup
chocolate chips
1/2 cup
chopped pecans
Cream butter and sugar. Add eggs Mix in flour , baking soda, and salt. Fold in remaining ingredients. Drop by tablespoons onto greased cookie sheet. Bake for 8-10 minutes at 350 degrees.
Brownie Pie

Butter

Square of unsweetened chocolate
1 cup
sugar
1/2 cup
Flour, sifted

eggs
1/2 teaspoon
Vanilla
1 cup
Pecans, chopped
Melt butter and chocolate over low heat. Remove from heat and stir in alternately sugar, flour, eggs, and vanilla. Blend pecans into mixture. Pour into a 9" unbaked pie crust. Bake 25-30 minutes at 325 degrees.
